When using an Hydrostatics block to model the hull, do the surfaces not touching the water have a drag of zero, or is the air taken into account ?

The windage is not computed by the ‘Hydrostatics’ block. It can be estimated using the custom “Windage01” block provided in the Gomboc 60 or Power Boat project samples. This block is used in the Aero *.bic files and estimates the windage of a volume based on its vertical, horizontal and side windage areas and associated drag coefficients.
If you have CFD data for the windage, you can also add it to your model as a surface response. A few points at different AWA, normalized by (½*rho*V²) should be enough.
